Servings: people
Instructions
Prepare the evening before you wish to cook the stew. Cut the onion into wedges. Chop the carrots and celery into large bite-size pieces. Dice the potatoes. Mince the garlic, thyme, rosemary, and parsley. Put all of these into a large bowl. Cover. Refrigerate until the morning. Note: Don't use the crockpot container in the refrigerator because it will take too long for the crockpot to reheat it.
Put the beef stew meat into the crock pot. Add the bowl of prepared vegetables and spices. Add the chicken broth, worcestershire, bay leaves split in half, salt, and pepper. Add cold water until all of the ingredients are just submerged. Cover. Turn crockpot on high and cook for about 8 hours. Cooking times may vary with different crockpots.
Stab a couple of potatoes with a fork to see if they are cooked. Cook until potatoes are done. Then check the beef just to make sure that is also cooked.
Serve and enjoy! Rolls with butter pair nicely with this grassfed beef stew.
